Kelly Casper’s Spinach Salad-Cami Hafen

1 pkg. Spinach leaves
1 head romaine lettuce
½ lb. Swiss cheese, grated
1/3 lb. Bacon, crumbled
2/3 cup cottage cheese
2/3 cup mushrooms, sliced

Dressing:
1/4 cup white vinegar
3/4 cup olive oil
½ cup sugar
1 t. salt
½ t. dry mustard
1 T poppy seeds
1 medium red onion, sliced

For dressing: blend first 6 ingredients in blender. Pour over sliced red onions and marinate over night. Dress over lettuce, etc. just before serving.
